Overnight Apple Juice Porridge

With a chill in the air, nothing feels more comforting than a warming breakfast.

What could be better than porridge? Especially if you use apple juice in place of milk, giving it a little natural sweetness and making it dairy free.

If you prefer, swap the toppings for fresh seasonal fruit.

In winter months heat gently in a saucepan before adding the nuts and fruit.

This recipe serves 4.

  • 200g rolled or jumbo oats (not instant or quick cooking)
  • 250ml your favourite Cawston Press juice
  • 1 grated apple
  • 25g chopped almonds, pecans or walnuts
  • 25g dried fruit – sultanas, raisins, apricots

  1. Combine the oats and apple juice in a bowl, cover & refrigerate overnight.
  2. The next morning, scoop the porridge into bowls.
  3. Stir in the grated apple.
  4. Top with the nuts and dried fruit.
